Hayman's Old Tom 70cl.

Hayman's Old Tom 70cl.

Hayman's Old Tom is a rich, well-rounded, and versatile English gin with a beautiful, delicate finish. When Hayman Distillers first began distilling gin 150 years ago, Old Tom was the London Dry Gin of choice. Today, it's a less familiar style of gin, but it remains a favorite among bartenders for crafting cocktails like the Martinez, Tom Collins, and Ramos Gin Fizz. The generous amounts of botanicals used in its family recipe create a bold citrus and juniper-pine character that is smooth and beautifully delicate with a subtle underlying sweetness. It's perfect for a fuller, more flavorful gin and tonic and absolutely delicious with Sicilian lemonade.

PRODUCTION

Hayman's has used the same botanicals and recipe for over 150 years. Sourced from around the world, 10 botanicals are used in varying proportions, depending on the style of gin being distilled. The correct oil content and the individual flavors of each botanical are crucial in selecting a precise aroma and taste. For example, juniper berry has been, and always will be, the most important botanical in the distillation process, as it forms the backbone of a true gin. However, juniper must be supported by the fresh citrus flavors of orange and lemon peel, the warmth of spices like cinnamon and nutmeg, earthy notes from angelica, and a touch of sweetness from licorice root.

TASTING

Appearance: Colorless.

Nose: Sweet aromas of almonds and citrus with hints of ginger, which together with juniper and coriander provides a rounded fragrance, but as with most Old Tom, it is the sweetness of the licorice that stands out.

Palate: Rich, rounded, and incredibly smooth, with vibrant citrus and a light, herbaceous spiciness from juniper and coriander alongside hints of ginger. It offers a traditional balance of Old Tom characteristics, which is undoubtedly the champion of this slightly sweet style of gin.
