Campo Eliseo 2017 is a 100% Verdejo white wine fermented in barrels. Verdejo is one of the most important Spanish white strains, typical of the Rueda designation of origin. It appears oily and long, with fruity aromas of peach and apricot; It is a strain with a very marked phenolic character; A late variety, Verdejo is harvested when the skin turns brown, usually a month after Sauvignon. It is ideal to have as an appetizer or with fish in sauce such as pike or grilled monkfish, but it also pairs perfectly with a white beef tenderloin. Awards and recognitions:

Description
PREPARATION
Grapes: 100% Verdejo.
For the production of Campo Eliseo Verdejo 2017 white wine the harvest was carried out manually and the grapes were processed after spending a night in a cold chamber and the cluster selection was carried out on the table, without destemming, to proceed to a 12-hour pre-fermentation maceration in an inert membrane press and a cold static racking. It was sent by gravity to barrels where it fermented with indigenous yeast, without malolactic fermentation. The lees were worked daily by batonnage, reducing the frequency until stopping after four months. Afterwards the wine was separated from the coarse lees and continued in the barrel with its fine lees. The aging took place in French oak barrels for 9 months. It was a very rainy year, especially in spring. This caused a very strong vegetative development, the plants were very vigorous and there was a strong pressure of diseases caused by fungi, which forced the implementation of organic practices to have a good sanitary condition.
TASTING
View: Beautiful bright yellow color with golden reflections.
Nose: Intense, fresh and floral, with notes of fresh white-fleshed fruit.
Mouth: Structured with a balanced volume, giving a nice persistence in the mouth and aromatic complexity in the finish.
Recommended temperature: 10-12ºC.
